Salmon & Roasted Root Veggie Salad
Serves 2
Ingredients

1 medium sweet potato, peeled and diced

1 medium beet, peeled and diced

3 tbsp extra virgin olive oil (divided)

10 oz salmon filet

1 tbsp lemon juice
-
1 tsp Dijon mustard

1/8 tsp turmeric

3 cups baby spinach

2 tbsp pumpkin seeds

Salt and pepper, to taste
Directions

Preheat oven to 400°F (205°C) and line a baking sheet with parchment paper.

Place sweet potato and beet on opposite sides of the sheet. Drizzle with one-third of the oil, season, and bake for 15 minutes.

Stir vegetables. Pat salmon dry and place in the center of the sheet. Season and return to oven for 15–18 minutes, until cooked through.

Whisk lemon juice, Dijon, turmeric, and remaining oil to make the dressing.
